			<content:encoded><![CDATA[<p>Squid is also known as ‘calamari’ its Italian name.</p>
<p>Species of squid whose side fins run the full length of their bodies (tubes) are identified as calamari and claimed to be more tender the other squids (shorter fins)</p>
<p>Calamari seems to sound more palatable than squid, you&#8217;ll most often see squid recipes listed as calamari on restaurant menus.</p>
<p><strong>There are four main squid/calamari species found in Australia:</strong></p>
<p><a href="http://www.sydneyfishmarket.com.au/Information/SpeciesInfo/tabid/91/xmmid/620/xmid/190/Default.aspx">Loligo Squid</a> – Hawkesbury squid (short side fins)</p>
<p>They have mottled pinky-purple skin, long thin bodies and pointy side fins that run about half their length. Typically, they are about 20cm long and weigh 100g and are found in estuaries along the NSW coast.</p>
<p><a href="http://www.sydneyfishmarket.com.au/Information/SpeciesInfo/tabid/91/xmmid/620/xmid/186/Default.aspx">Gould’s Squid</a> (short side fins)</p>
<p>They are also known as arrow, torpedo or seined squid. They have smooth, light brownish-pink skin with a purple-blue stripe running down the tube and average 600-800g. They are found around the southern Australian coastline from southern Queensland to Geraldton in WA.</p>
<p><a href="http://www.sydneyfishmarket.com.au/Information/SpeciesInfo/tabid/91/xmmid/620/xmid/211/Default.aspx">Southern Calamari</a> (full length side fins)</p>
<p>Southern Calamari have mottled purple-brown skin with long, rounded side fins running almost the full length of their body. They are typically about 16cm long, weigh around 150g and are common in coastal bays around southern Australia from Brisbane to Shark Bay in WA, with most of the commercial catch coming from SA.</p>
<p><a href="http://www.sydneyfishmarket.com.au/Information/SpeciesInfo/tabid/91/xmmid/620/xmid/197/Default.aspx">Northern Calamari</a> (full length side fins)</p>
<p>Northern Calamari have thick, dark brownie-green bodies with long side fins running almost their full length. They average about 15cm, weigh about 500g and are found around Australia’s northern coast from northern NSW to south of Shark Bay in WA. Most of the commercial catch comes from southern Queensland in winter.</p>

The chefs cooked sea scallops with exotic mushroom and scallop roe ragout and lamb cutlets with pesto and parmesan while the crowd watched on intently.</p>
<p>Whilst cooking, the highly experienced chefs spoke about the freshly-sourced products including lamb from the Riverina, New South Wales and scallops sourced from the South Coast of New South Wales. Everyone in the audience enjoyed a taste of the exquisite canapés, which make up part of a diverse menu served at events at Dockside Group’s eight venues and restaurants.</p>

			<content:encoded><![CDATA[<p>The Rocks was the setting for a day of indulgence on Sunday as hundreds of people flocked to the streets to enjoy the annual Aroma Festival. Set in the warehouses lining Campbell’s Cove, Dockside Group’s three restaurants, Italian Village, Wolfies and Waterfront were a focus of the celebrations with the historic sandstone buildings built as the hub of international trade during the late 19<sup>th</sup> Century. For over a hundred years, The Rocks was the centre of Sydney&#8217;s trade, where produce such as coffee, tea, chocolate and spice was off-loaded to these warehouses.</p>
<p>On Sunday, Italian Village hosted a stall serving delicious hot meals and snacks to festival-goers in Campbell’s Cove while they also indulged in a sensory overload of music, tastes and experiences. The restaurants welcomed large numbers of people who sat down to enjoy a hearty winter meal while soaking up the nostalgic surroundings of Sydney’s rich heritage.</p>
<p>Visitors to the festival experienced the world in a day with divine taste sensations in four global regions: The Orient, The Continent, The Latin Quarter and The Oasis.</p>
<p>Free entertainment included lion and dragon dancers, belly dancing, sword dancing, the Sydney French Choir and the Sydney Youth Orchestra. This year, guests to the festival could learn everything they ever wanted to know about coffee at specialty coffee master classes or find out what their future held with leaf tea readings.</p>
